Ingredients
1/3 cup I Can't Believe It's Not Butter!® made with Olive Oil Spread
6 medium zucchini and/or yellow squash, cut into bite-size pieces
3 cloves garlic, peeled and halved
1 tsp. chopped fresh rosemary or 1/4 tsp. dried rosemary leaves, crushed
3 Tbsp. grated Parmesan cheese
Instructions

Preheat oven to 425°.

Melt I Can't Believe It's Not Butter!® made with Olive Oil Spread in shallow roasting pan in oven about 2 minutes. Stir in zucchini, garlic and rosemary. Season, if desired, with salt and ground black pepper.

Roast, stirring once, 30 minutes or until zucchini is tender and golden. Stir in cheese and serve.
