Ingredients
2 Tbsp. I Can't Believe It's Not Butter!® Spread
1 cup uncooked regular or converted white rice
1 small onion, chopped
1/4 tsp. salt
1/8 tsp. ground black pepper
1/8 tsp. dried thyme leaves, crushed (optional)
1-3/4 cups chicken broth
1 tsp. chopped fresh parsley (optional)
Instructions

Melt I Can't Believe It's Not Butter!® Spread in 2-quart saucepan over medium-high heat and cook rice, onion, salt, pepper and thyme, stirring occasionally, until rice is golden, about 4 minutes. Add chicken broth. Bring to a boil over high heat. Reduce heat to low and simmer covered 20 minutes. Let stand 5 minutes. Stir in parsley.

NOTE: Recipe can be halved.
