Ingredients
2-1/2 cups all-purpose flour
1 tsp. ground cinnamon
Grated peel of 1 lemon
1/2 tsp. baking soda
1/2 tsp. cream of tartar
1/4 tsp. Kosher salt
1 cup I Can't Believe It's Not Butter!® All Purpose Sticks
3/4 cup granulated sugar, divided
1/2 cup confectioners sugar
1 egg
1/2 tsp. vanilla extract
2 Tbsp. unsweetened cocoa powder
Instructions

Preheat oven to 350°.

Combine flour, cinnamon, lemon peel, baking soda, cream of tartar and salt in medium bowl with wire whisk; set aside.

Beat I Can't Believe It's Not Butter!® All Purpose Sticks, 1/2 cup granulated sugar and confectioners sugar until light and fluffy, scraping down sides occasionally. Beat in egg and vanilla just until combined. Slowly beat in flour mixture.

Evenly roll dough into 36 egg-shaped ovals. Arrange on ungreased baking sheets, 2-inches apart. Bake 10 minutes or until lightly golden on bottoms. Cool sheets 2 minutes on wire rack, remove cookies from sheets.

Combine remaining 1/4 cup sugar with cocoa powder; sprinkle over cookies. Serve immediately or cool completely.
