- 2 tsp. I Can't Believe It's Not Butter!® Spread - 1 cup chopped carrots - 1 cup chopped onion - 1 cup chopped celery - 4 cups low fat reduced sodium chicken broth - 1 cup cut-up cooked chicken breast (about 5 oz.) - 2 Tbsp. flat-leaf parsley (optional)

Instructions
Melt I Can't Believe It's Not Butter!® Spread in 4-quart saucepot over medium heat and cook carrots, onion and celery, stirring occasionally, until tender, about 8 minutes. Add broth and bring to a simmer. Stir in chicken and cook 2 minutes or until heated through. Garnish with parsley.
